Lamb With Creamy Mint Sauce

20-minute lamb with mint sauce - a quick, flavorful dinner.
Ingredients:
  • 2/3 cup plain fat-free yogurt
  • 1/4 cup firmly packed fresh mint leaves
  • 2 tablespoons sugar
  • 4 lamb loin chops, about 1 inch thick (1 pound)
Instructions:
  • In a blender or food processor, combine yogurt, mint, and sugar. Blend on medium speed until mint leaves are finely chopped, stopping to scrape the sides as needed.
  • Preheat broiler. Grease broiler pan rack. Trim fat from lamb and place on rack in broiler pan. Broil 2 to 3 inches from heat for 12 to 14 minutes, turning once, until meat thermometer reads 160°F (medium doneness). Serve with sauce.
