Spicy marinated lamb paired with creamy mint yogurt dip is a delicious combination.
Ingredients:
  • 2 lamb backstraps (about 500g), sliced
  • 5.00 gm ground cumin
  • 1 tsp chilli flakes
  • 60.00 ml freshly chopped oregano
  • 60ml olive oil
  • 1 large onion, sliced
  • 44.40 gm tomato paste
  • 39.60 gm red wine
  • 1/2 red capsicum, seeds removed, sliced
  • 3 large tomatoes, diced
  • 4 pita breads, to serve
  • 100.00 ml thick Greek yoghurt
  • 20.00 ml freshly chopped mint
  • 1/2 garlic clove, crushed
Instructions:
  • In a non-metallic bowl, combine lamb, cumin, chili, oregano, and 2 tablespoons of oil. Season with salt and pepper, mix well. Cover and refrigerate for 1 hour to marinate.
  • Mix yoghurt, fresh mint, and minced garlic in a small bowl, then chill until ready to serve.
  • In a large frypan over high heat, heat the rest of the olive oil. Sauté the onion for 2-3 minutes until lightly browned. Brown the marinated lamb in batches. Lower heat to medium, mix in tomato paste and red wine. Add capsicum and tomato, then simmer on low for 10 minutes.
  • Season the lamb with a pinch of salt and a sprinkle of pepper. Serve the seasoned lamb on 4 pita breads, wrap tightly, and top with a dollop of mint yogurt.
