Indulge in savory lamb steaks on a bed of flavorful kumara mash and fresh veggies for a delightful meal.
Ingredients:
  • 750g kumara (orange sweet potato), peeled, cut into 2cm pieces
  • 5.00 gm reduced-fat spread
  • 41.20 gm warmed low-fat milk
  • 9.20 gm olive oil
  • 1 brown onion, cut into thin wedges
  • 250g zucchini, cut into 2cm cubes
  • 250g yellow squash, quartered
  • 250g punnet cherry tomatoes, halved
  • 4 (about 100g each) trim lamb leg steaks
Instructions:
  • Microwave the kumara in a covered dish until tender, about 10 minutes on HIGH. Drain and mash with spread, milk, salt, and pepper. Adjust consistency with more milk if needed.
  • Heat half of the oil in a frying pan over medium heat. Sauté onion, zucchini, and squash for 7 minutes, then add tomatoes and cook on high heat for an additional 3 minutes.
  • Heat up a chargrill on medium-high, then brush lamb with the remaining oil and season with pepper. Grill for 3 minutes per side, let it rest for 5 minutes, then serve with kumara mash and vegetables.
