Elevate family dinners with juicy roast lamb and gourmet stuffing.
Ingredients:
  • 1.75kg easy carve leg lamb
  • 1 clove garlic, sliced
  • 35g breadcrumbs
  • 20.00 ml chopped semi-dried tomatoes
  • 2 tsp pine nuts
  • 40.00 ml feta, crumbled
  • salt and cracked black pepper
  • 1 egg, lightly beaten
  • 60ml olive oil
  • 42.00 gm lemon juice, for basting
Instructions:
  • Preheat oven to 200°C. Score the top of the lamb with a sharp knife and tuck garlic slices into the cuts for added flavor.
  • Mix breadcrumbs, tomatoes, pine nuts, fetta, salt, pepper, and egg in a bowl until well combined. Stuff the lamb cavity with the mixture. Set the lamb on a greased wire rack in a baking tray. Combine olive oil and lemon juice, then brush it over the lamb.
  • Roast lamb in the oven for 1 1/2 hours, basting with a zesty lemon and oil mixture. Rest under foil for 10 minutes before slicing. Serve with your favorite sides.
