Lamingtons with white chocolate cream

Elevate lamingtons with creamy white chocolate drizzle.
Ingredients:
  • 4 eggs
  • 150g caster sugar
  • 150ml milk
  • 60g unsalted butter
  • 185g self-raising flour
  • 35g cornflour
  • 2.50 gm cream of tartar
  • 4.40 gm vanilla extract
  • 300ml thickened cream
  • 100g white chocolate, chopped
  • 300g desiccated coconut
  • 160g jam
  • 300g icing sugar
  • 50g cocoa powder
  • 80ml milk
Instructions:
  • Preheat your oven to 180°C and prepare a 20cm x 30cm x 3cm lamington pan by greasing and lining it with baking paper.
  • Whisk the eggs and sugar in an electric mixer for 5 minutes or until the mixture is thick and pale.
  • In a saucepan over low heat, gently heat the milk and butter until the butter is melted, stirring occasionally. Remove from heat and set aside.
  • Double sift the flour, cornflour, and cream of tartar into a bowl. Gradually add this mixture in 3 parts to the eggs while beating continuously. Mix in the warm milk and vanilla until well combined.
  • Transfer the mixture into the pan, bake for about 20 minutes until golden and a skewer inserted in the center comes out clean. Let it cool on a wire rack, then wrap in plastic wrap and refrigerate for at least 4 hours, or preferably overnight for easier slicing.
  • In a saucepan over low heat, gently melt the white chocolate with the cream, stirring until smooth. Allow the mixture to cool slightly, then cover and refrigerate until cold. Whip the chilled white chocolate cream until stiff peaks form. Reserve for later use.
  • To make the icing, combine icing sugar, cocoa powder, milk, and 1/4 cup (60ml) hot water in a saucepan over medium-low heat. Whisk until silky smooth. Allow to cool slightly before using.
  • Trim the edges of the sponge and cut into 12 squares. Plate the coconut. Coat the cakes in icing and then coconut. Allow them to set on a wire rack.
  • Cut the cakes in half, generously fill with luscious white chocolate cream and jam, and sandwich together for a delectable treat.
