Classic and comforting lasagne is a crowd-pleasing winter favorite!
Ingredients:
9.20 gm olive oil
1onion, diced
500g veal mince
500g pork mince
1carrot, peeled and grated
2zucchini, grated
200g cup mushrooms, sliced
22.20 gm no-added-salt tomato paste
1 tsp dried oregano
100g spinach leaves
5fresh lasagne sheets
500g fresh ricotta cheese
128.75 gm skim milk
125.00 ml Brand Light Shredded Tasty Cheese
Instructions:
- Preheat your oven to 180C (160C fan-forced) and warm oil in a heavy-based saucepan over medium heat. Sauté onion and garlic until softened, about 2-3 minutes. Add the mince and cook for 5 minutes, breaking up any lumps. Incorporate carrot, zucchini, mushrooms, tomato paste, tomatoes, oregano, and ½ cup of water. Bring to a boil, then simmer on low for 30 minutes until slightly reduced. Finally, fold in the spinach before serving.
Start by layering one lasagne sheet at the bottom of a 28cm x 18cm ovenproof dish. Next, generously spread a quarter of the savory mince mixture over the lasagne sheet. Repeat this process with the remaining mince and lasagne sheets, ending with a final lasagne layer on top.
Mix together the ricotta and skim milk until smooth. Spread the mixture evenly over the lasagne layer, ensuring it reaches the edges. Sprinkle grated cheese on top. Bake in the oven for 25-30 minutes or until golden brown.
