Inspire young chefs with this simple and delicious homemade lasagna recipe.
Ingredients:
  • Olive oil spray
  • 1 brown onion, finely chopped
  • 2 celery sticks, trimmed, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 garlic cloves, crushed
  • 500g pork and veal mince
  • 400g can diced tomatoes
  • 4 fresh lasagne sheets
  • 25g (1/3 cup) finely grated parmesan
  • 40g butter
  • 40g (1/4 cup) plain flour
  • 410ml (1 2/3 cup) milk
Instructions:
  • 1. Preheat the oven to 190ºC and generously spray four 500ml (2-cup) capacity baking dishes with oil. 2. Heat a non-stick frying pan over medium heat, spray with oil, and sauté the onion, celery, and carrot for 5 minutes until the onion softens. 3. Add the garlic and cook for 1 minute until fragrant.
  • Cook the mince while stirring with a wooden spoon until it is browned and any lumps are broken up, for about 5 minutes.
  • Add the tomato and lower the heat to a gentle simmer. Cook, stirring frequently, for about 10 minutes until the mixture thickens slightly.
  • In a saucepan over medium heat, melt butter until foamy. Stir in flour, cook for 1 minute until bubbling. Remove from heat. Gradually whisk in milk until smooth. Return to heat, cook for 5 minutes until thickened. Whisk for 1 more minute. Remove from heat, stir in Parmesan, and season with pepper. Assemble lasagna in dishes, layering with mince and lasagna sheets, finishing with bechamel sauce. Smooth the top with a spoon and sprinkle with Parmesan.
  • Arrange the dishes on a baking tray and bake in the oven until golden, for 40-45 minutes.
