Whip up quick and easy vegan cashew cream cheese without soaking. Perfect for spreading on bread, crackers, or using as a dip.
Ingredients:
  • 2 cups unsalted raw cashews
  • 1 clove garlic
  • 1 lemon, juiced
  • 1.5 cups water
  • 1 teaspoon nutritional yeast
  • 1 pinch salt
Instructions:
  • In a high-speed blender, pulse cashews and garlic until finely ground, scraping down the sides as needed. Add lemon juice and blend until smooth.
  • Gradually pour water, 1/4 cup at a time, into the blender until the mixture is smooth and almost thick. Refrigerate to allow it to thicken. Stir in the nutritional yeast. Add the final 1/4 cup of water only if necessary; do not surpass 1 1/2 cups water if you can. Ensure the mixture is perfectly smooth without any lumps.
  • Sample the mixture and adjust seasoning with salt as desired. Refrigerate for approximately 1 hour to allow it to thicken.
