Delicious Latvian cottage cheese pancakes with raisins, perfect for any meal. Top with butter, honey, or maple syrup for a sweet finish.
Ingredients:
  • 1 cup cottage cheese
  • 0.5 cup raisins
  • 2 eggs
  • 2 tablespoons white sugar
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons canola oil
  • 1.5 cups all-purpose flour
Instructions:
  • Combine cottage cheese, sweet raisins, eggs, sugar, fragrant vanilla extract, warm cinnamon, and a pinch of salt in a large bowl. Gradually incorporate flour until the batter is luxuriously thick.
  • In a large skillet over medium heat, sizzle batter by tablespoonfuls, flipping and pressing gently after 1 minute. Cook until each side turns golden brown, about 2 minutes per side. Flip back and cook for 1 more minute. Repeat with remaining batter.
