Traditional Latvian piragi: Savory bacon and onion filling in homemade rolls, passed down for generations.
Ingredients:
  • 5 cups all-purpose flour, divided
  • 2 (.25 ounce) packages active dry yeast
  • 1.5 teaspoons salt
  • 0.5 cup butter, softened
  • 1.5 cups warm water (110 degrees F/45 degrees C)
  • 2 large eggs, at room temperature
  • 1 pound bacon, chopped
  • 2 medium onions, diced
  • 4 large eggs, beaten
Instructions:
  • In a large mixing bowl, mix together 2 cups of flour, sugar, salt, and yeast until well combined. Use a fork to cut in the butter until the mixture resembles coarse cornmeal. Then, add warm water and beat on medium speed for 2 minutes.
  • Combine eggs and 1 cup of flour, mixing until thick. Gradually stir in the remaining 2 cups of flour, adding 1/2 cup at a time, until the dough forms.
  • Place the dough on a lightly floured surface and knead it until smooth and elastic for about 8 minutes. Cover it with a damp towel and allow it to rest for 20 minutes. Then, deflate the dough, cover it, and let it rise until doubled in size for 1 to 1 1/2 hours.
  • While the dough rises, fry bacon in a large skillet over medium-high heat until crispy, about 7 to 10 minutes, stirring occasionally. Place bacon on a paper towel-lined plate. Keep 1 tablespoon of bacon grease in the skillet and discard the rest.
  • Saute onion in the flavorful bacon grease over medium heat until soft for about 5 minutes. Set aside to combine with crispy bacon, season with salt and pepper, and wait for the dough to rise.
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease two large baking pans with cooking spray before transferring the beaten eggs to a bowl.
  • Cut dough into 3 portions and shape each into 12 balls. Roll each ball into thin pizza dough. Fill center with onion-bacon mixture using a spoon. Brush surrounding dough with egg wash, fold edges over filling. Arrange piragi in baking pans, corners down. Brush tops with egg wash before baking.
  • Bake one pan in the preheated oven for 5 minutes. Brush the tops with more egg wash, then continue baking until golden brown, about 20 more minutes.
  • Continue baking the rest of the piragi until they are golden brown and delicious.
