Lauren's Apple Cider Roast Turkey

Create a flavorful roast turkey by marinating it in apple cider brine and seasoning it with seasoned olive oil for a crispy skin and juicy meat.
Ingredients:
  • 1 (16 pound) whole turkey, neck and giblets removed
  • 1.5 gallons water
  • 1 gallon apple cider
  • 1.5 cups kosher salt
  • 1 cup white sugar
  • 0.25 cup extra-virgin olive oil
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon poultry seasoning
Instructions:
  • Thoroughly wash the turkey inside and out with cold water, then dry it using paper towels.
  • Combine water, apple cider, kosher salt, and sugar in a spacious pot or a 5-gallon food-grade bucket. Stir well until the salt and sugar have dissolved. Add the turkey to the brine, cover, and chill in the refrigerator for 8 hours or overnight.
  • Preheat the oven to 325°F (165°C) for the perfect baking temperature.
  • Remove the turkey from the brine and discard the used brine. Place the turkey breast-side up in a roasting pan and pat it dry with paper towels. Gently loosen the skin over the breast and thighs using your fingers.
  • Combine fragrant olive oil with aromatic thyme and flavorful poultry seasoning in a small bowl. Massage the seasoned oil onto the turkey, making sure to reach under the loosened skin. Lightly cover the turkey with aluminum foil.
  • Roast the turkey in the preheated oven until the meat thermometer reads 165 to 175 degrees F (75 to 80 degrees C) when inserted into the thickest part of a thigh, without touching the bone, for 4 to 4 1/2 hours. Uncover the turkey about 45 minutes before it's done to allow the skin to brown. Let the turkey rest for 30 to 45 minutes before carving.
