Simple Pavlova with fresh berries and decadent chocolate topping.
Ingredients:
  • 125g fresh raspberries, extra
  • 250g fresh raspberries
  • 75g caster sugar
  • 350g strawberries
  • 900ml thickened cream
  • 2 x 500g Make At Home Pavlova
  • 1 x 30g Mint Flake, crumbled
Instructions:
  • In a small saucepan, gently combine the raspberries and sugar over low heat until the sugar dissolves and the raspberries are crushed, about 3 minutes. Increase the heat to high and bring it to a boil, then reduce the heat to medium and simmer for another 3 minutes, until the mixture thickens. Take it off the heat and let it cool.
  • Prepare the strawberries by removing the hulls. Cut large strawberries into quarters and smaller ones in half.
  • Blend the raspberry mixture in a small food processor until perfectly smooth, then strain it through a fine sieve into a small bowl.
  • In a large bowl, whip the cream until it forms firm peaks, then gently fold in three-quarters of the raspberry mixture.
  • Place a pavlova on a serving platter. Layer it with half the cream mixture and half the strawberries. Add the second pavlova on top. Drizzle over the remaining cream mixture. Finish by topping with the rest of the strawberries and raspberries. Sprinkle with crumbled chocolate and serve right away.
