Quick Turkish-inspired gozleme with mountain bread layers and a cheesy filling of ricotta, feta, and mozzarella. Baked in the oven for a delicious twist in just 40 minutes.
Ingredients:
  • 3 sheets mountain bread
  • 30g butter, melted
  • 125g fresh ricotta
  • 2 garlic cloves, crushed
  • 100g Danish feta
  • 60g pkt baby spinach leaves, shredded
  • 200g mozzarella, coarsely grated
  • Sumac, to serve (optional)
  • Fresh thyme leaves, to serve (optional)
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease a 21 x 26cm oven tray. Place one sheet of mountain bread on the tray and brush with melted butter. Top with another sheet and brush with more butter.
  • Mash the ricotta and garlic together using a fork until fully mixed. Season the mixture. Spread it over the bread. Top with crumbled feta, spinach, and half of the mozzarella.
  • Place the last sheet of bread on top and press down gently. Drizzle with melted butter. Bake in the oven for 10 minutes. Add the rest of the mozzarella on top and bake for another 15 minutes until the cheese is golden and the bread is crunchy. Let it cool slightly, then cut into squares. Garnish with sumac and thyme, if desired.
