Kids layer beans, avocado, and tomato for a fun and healthy party snack that disappears fast!
Ingredients:
  • 3 spinach wraps
  • 2 wholemeal wraps
  • 2 white wraps
  • 160g corn cob
  • 400g can black beans, rinsed, drained
  • 3 avocados, stoned, peeled, mashed
  • 10.00 gm taco seasoning
  • 21.00 gm lime juice
  • 200g cherry tomatoes, chopped
  • 1/2 small red onion, chopped
  • 2 spring onions, thinly sliced
  • Black writing icing, to decorate
Instructions:
  • Preheat your oven to 180°C. Cut tree shapes from the spinach wraps using kitchen scissors and tombstone shapes from the wholemeal and white wraps. Arrange the trees and tombstones on baking trays. Bake for 8-10 minutes until light golden and crisp, turning occasionally. Allow them to cool on the trays.
  • Boil the corn in a small saucepan for 2 mins, then cool it under cold water, drain well, and combine in a bowl with black beans. Coarsely mash with a fork and distribute evenly among serving glasses.
  • In a bowl, mix together avocado, taco seasoning, and lime juice. Spoon the mixture over the corn. In a separate small bowl, combine tomato, onion, and spring onion. Sprinkle this over the avocado mixture in the glasses.
  • Decorate the tombstones with black writing icing, then place the trees and tombstones in the glasses for a spooky presentation.
