Layered orange and lemon curd

Ingredients:
  • 6.00 eggs
  • 2.00 egg yolk
  • 285.95 gm caster sugar
  • 200.00g butter, chopped
  • 3 tsp finely grated orange rind
  • 131.25 gm orange juice
  • Red food colouring
  • 322.50 gm caster sugar
  • 3 tsp finely grated lemon rind
  • 86.63 gm lemon juice
Instructions:
  • Preheat your oven, wash jars, lids, and a heatproof glass jug, and boil them in hot soapy water. Then carefully transfer them to a tea towel-lined tray in the oven to keep warm.
  • Create Orange Curd: In a heavy-based saucepan, combine eggs, yolk, sugar, butter, orange rind, and orange juice. Cook over medium heat, stirring constantly for 10 to 16 minutes until thickened. Add red food coloring for a light orange hue. Strain through a sieve into jars, then let cool to set.
  • Prepare the Lemon curd by whisking eggs, yolk, and sugar in a heavy-based saucepan. Mix in butter, lemon rind, and lemon juice. Cook on medium heat, stirring constantly (do not simmer), for 10 to 16 minutes until the mixture thickens and coats the back of a spoon. Strain the mixture through a sieve into a jug. Spoon the lemon curd over the orange curd, seal the jars, cool, and refrigerate. Lemon curd can be stored in the fridge for up to 1 month and should be consumed within 1 week once opened.
