Lazy garlic chicken with butter noodles recipe

Busy night chicken spaghetti ready in 30 minutes.
Ingredients:
  • 200g dried spaghetti
  • 9.20 gm olive oil
  • 600g chicken thigh fillets, trimmed
  • 80g butter, chopped
  • 4 garlic cloves, finely chopped
  • 250g packet zucchini noodles
  • Pinch of dried chilli flakes, plus extra, to serve (optional)
  • 82.50 ml chopped fresh continental parsley leaves, plus extra, to serve (optional)
  • Finely shredded parmesan, to serve (optional)
Instructions:
  • Boil the spaghetti in a large saucepan of water according to package instructions until al dente. Save 60ml (1/4 cup) of pasta water before draining.
  • Heat the oil in a large non-stick frying pan over high heat. Season the chicken and cook on each side for 6 minutes until fully cooked. Let it cool on a plate, then chop coarsely.
  • Lower the heat and cook butter and garlic in the pan until the butter is foaming and the garlic is fragrant. Add zucchini noodles and chili, if desired.
  • Combine the cooked pasta with the chicken, zucchini, parsley, and some reserved pasta water in a saucepan. Season and toss well using tongs. Divide the mixture into serving bowls, drizzle with pan sauce, and garnish with extra parsley. Top with additional chilli and parmesan before serving, if desired.
