Zesty Lebanese bean salad with fava beans, chickpeas, white beans, lemon juice, and parsley - ideal for picnics.
Ingredients:
  • 1 (15 ounce) can fava beans, drained and rinsed
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 (15.5 ounce) can white beans, drained and rinsed
  • 0.25 cup chopped flat leaf parsley, or more to taste
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • kosher salt and ground black pepper to taste
Instructions:
  • Combine fava beans, chickpeas, white beans, parsley, olive oil, garlic, and lemon juice in a bowl. Season with salt and pepper, then refrigerate for at least 2 hours before serving to let the flavors meld.
