Nutritious beef kebabs with chickpeas and sprouts for a healthy meal.
Ingredients:
  • 900g diced beef
  • McCormick Middle Eastern spice mix
  • 400g can chickpeas, drained, rinsed
  • 400g pkt grape tomatoes, halved
  • 100g mung bean sprouts
  • 3 Lebanese cucumbers, chopped
  • 4 shallots, trimmed, sliced
  • 40.00 ml chopped fresh dill
  • 1/2 lemon, juiced
  • Wholemeal Lebanese bread, to serve
  • Lemon wedges, to serve
Instructions:
  • Submerge 8 skewers in water for 30 minutes. Remove and skewer the beef. Arrange on a plate and generously sprinkle with the spice mix.
  • Combine chickpeas, tomato, sprouts, cucumber, shallots, dill, and lemon juice in a bowl.
  • Preheat a chargrill pan over medium-high heat. Lightly spray with oil, then cook skewers, turning frequently, for 8-10 minutes.
  • Plate the salad, then arrange the skewers on top. Serve alongside the bread and lemon wedges.
