Tender beef skewers with a delightful sweet and tangy flavor make for a guilt-free and delicious meal.
Ingredients:
  • 500g beef rump steak, trimmed
  • 52.80 gm orange marmalade
  • 65.63 gm light soy sauce
  • 1 orange, rind finely grated, juiced
  • 100.00 gm jasmine rice, well rinsed
  • 1 bunch baby bok choy, shredded
  • 1 small red capsicum, thinly sliced
  • olive oil cooking spray
Instructions:
  • Begin by submerging the skewers in cold water for half an hour. Once soaked, slice the steak into strips that are 8cm in length, before threading them onto the skewers. Arrange the skewers in a shallow ceramic dish.
  • Mix together the marmalade, 1 tablespoon of soy sauce, and 1 tablespoon of orange juice until well combined. Pour the mixture over the skewers and make sure to coat the meat evenly. Cover and refrigerate for 30 minutes.
  • In a microwave-safe bowl, combine rice and 1 1/5 cups water. Cover with a lid or double layer of plastic wrap. Microwave on HIGH (100%) for 5 minutes, then on MEDIUM (50%) for 7 minutes. Remove from microwave. Add orange rind, bok choy, and capsicum. Stir well to mix. Cover and let it stand for 5 minutes. Combine the rest of the soy sauce and orange juice.
  • Preheat the barbecue to medium heat. Coat the skewers with oil. Grill for about 1 minute on each side or until desired doneness. Enjoy with bok choy rice and a side of soy dipping sauce.
