Beef skewers with coriander and cashew pilaf

Savory spicy kebabs served over flavorful rice pilaf.
Ingredients:
  • 266.00 gm white rice
  • 1kg diced beef (such as topside)
  • 30.00 ml pepper steak seasoning (see note)
  • 1 red onion, chopped
  • 1 lemon, rind grated, juiced
  • 165.00 ml roasted cashew nuts roughly chopped
  • 165.00 ml coriander, chopped
Instructions:
  • Submerge bamboo skewers in water for 30 minutes to plump up. Drain excess water before using.
  • Combine beef with flavorful pepper steak seasoning in a bowl, ensuring an even coating.
  • Skewer the beef and sear in a hot pan for 3 minutes on each side after lowering the heat to medium and adding the oil.
  • Cook rice following the absorption method as instructed on the packet for approximately 15 minutes.
  • In a frying pan over medium heat, heat 1 1/2 tablespoons of oil. Add onion and cook, stirring, for about 3 minutes until soft. Stir in cooked rice, lemon rind, 2 tablespoons of lemon juice, cashews, and coriander. Mix well and season with salt. Serve the flavorful pilaf with beef skewers.
