Easy beef skewers with flavorful coriander rice, perfect for a family feast.
Ingredients:
  • 400g lean beef rump fillet steaks, trimmed
  • 2 limes
  • 3cm piece fresh ginger, peeled, finely grated
  • 1 stem lemongrass, white part only, finely chopped
  • 1 small red chilli, deseeded, finely chopped
  • 200.00 gm basmati rice, rinsed
  • 1 red capsicum, finely chopped
  • 2 green onions, thinly sliced
  • 1 bunch coriander, leaves chopped
  • 250.00 ml beansprouts, trimmed
Instructions:
  • Thinly slice the beef. Juice one lime and cut the other into wedges. Mix 2 tablespoons lime juice, ginger, lemongrass, garlic, chili, and oil in a shallow ceramic dish. Add the beef and coat it with the marinade. Chill in the refrigerator for 20 minutes, if possible.
  • Skewer the beef strips and heat up the barbecue grill on medium-high.
  • Cook rice in a pot of boiling water until tender, about 10-12 minutes. Drain the rice and return it to the pot. Add capsicum, green onions, coriander, and beansprouts. Mix well, cover, and let sit. Enjoy!
  • Grill the barbecue skewers while turning and brushing with marinade for 2 minutes until cooked to desired doneness. Serve with fragrant coriander rice and fresh lime wedges.
