Easy Thai green curry beef skewers

Elevate your beef skewers with fresh seasonal vegetables in a flavorful Thai twist.
Ingredients:
  • 500g Beef Rump Steak, thinly sliced
  • 42.00 gm green curry paste
  • 270ml coconut milk
  • 1 lime, zested, juiced
  • 1/4 pineapple, peeled, cored, thinly sliced
  • 1 Lebanese cucumber, thinly sliced lengthways
  • 250.00 ml coriander leaves
  • 125.00 ml mint leaves
Instructions:
  • Mix the beef, half of the curry paste, and 1 tablespoon of coconut milk in a bowl. Stir in 2 teaspoons of lime juice and coat the beef well. Skewer the beef evenly onto soaked bamboo skewers.
  • In a large bowl, mix together the pineapple, cucumber, fresh coriander, mint, and lime zest. Drizzle in the rest of the lime juice and toss everything together.
  • 1. Preheat a large frying pan over high heat. 2. Sear the beef in 2 batches for 4 minutes, flipping once, until desired doneness. 3. Transfer the beef to a serving platter. 4. Stir in the leftover curry paste and coconut milk, cooking for 1-2 minutes until the mixture boils and thickens slightly.
  • Present the pineapple salad elegantly on the serving platter, then generously drizzle the sauce over the beef skewers before serving.
