Easy homemade Thai green curry with options for chicken or tofu instead of pork. Serve with fragrant jasmine rice for a delicious meal.
Ingredients:
  • 2 (8 ounce) cans bamboo shoots, drained and thinly sliced
  • 3 tablespoons corn oil
  • 3 tablespoons green curry paste, or more to taste
  • 1 pound lean boneless pork, cut into 1/2-inch cubes
  • 2 (14 ounce) cans coconut milk
  • 1 small red bell pepper, thinly sliced
  • 1 tablespoon white sugar
  • 8 makrut lime leaves, thinly sliced
  • 2 teaspoons fish sauce, or more to taste
  • 0.5 cup Thai basil
Instructions:
  • Boil a large pot of water and blanch bamboo shoots for 5 minutes. Drain well.
  • In a large pot over medium heat, heat oil and sauté curry paste until fragrant, around 2 minutes. Increase heat, add pork, and cook until lightly browned, 3 to 5 minutes. Stir in bamboo shoots, coconut milk, and red bell pepper.
  • Lower the heat and let the mixture simmer. Season it with sugar and salt; allow it to simmer for 10 minutes. Gently stir in the lime leaves, then cook for an additional minute. Season with fish sauce, mix in Thai basil, and serve.
