Thai green curry paste

Make aromatic Thai curry paste for authentic dishes.
Ingredients:
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 2 eschalots, peeled, quartered
  • 2 lemongrass stalks, white part only, chopped
  • 2 garlic cloves, quartered
  • 2cm piece fresh ginger, peeled, chopped
  • 8 long green chillies, chopped
  • 6 coriander roots and stems, washed, finely chopped
  • 6.10 gm shrimp paste (see note)
  • 18.40 gm vegetable oil
Instructions:
  • Toast coriander and cumin in a small frying pan over medium heat for 1 to 2 minutes until fragrant. Let cool completely.
  • Combine eschalots, lemongrass, garlic, ginger, chillies, coriander, shrimp paste, and spice mixture in a food processor. Pulse until finely chopped. Drizzle in oil and blend until smooth. Store in an airtight container in the fridge for up to 1 week.
