Create your own custom Thai green curry paste for full kitchen control!
Ingredients:
  • 2 eschalots, peeled, quartered
  • 2 lemongrass stalks, trimmed, chopped
  • 3 garlic cloves, peeled, quartered
  • 2cm piece fresh ginger, peeled, chopped
  • 6 long green chillies, chopped
  • 1 bunch fresh coriander (including roots), washed, chopped
  • 57.50 gm vegetable oil
Instructions:
  • Combine eschalots, lemongrass, garlic, ginger, chili, and coriander in a food processor. Pulse until finely chopped. With the processor running, slowly pour in the oil until a smooth paste forms. Transfer to an airtight container and refrigerate for up to 1 week.
