Try these quick sesame beef skewers with a fresh, vibrant salad for a delicious meal.
Ingredients:
  • 1 telegraph cucumber, halved lengthways, thinly sliced on an angle
  • 250g punnet cherry tomatoes, quartered
  • 80g bean sprout
  • 2 long red chillies, seeds removed, thinly sliced
  • 250.00 ml fresh coriander
  • 250.00 ml Thai basil (see note)
  • 500g beef fillet, thinly sliced into strips
  • 2 tsp sesame oil
  • 12.00 gm sesame seeds
  • 48.80 gm fish sauce
  • 42.00 gm lime juice
  • 32.00 gm light brown sugar
Instructions:
  • Submerge 8 bamboo skewers in hot water and let them soak for 15 minutes.
  • In a bowl, mix the cucumber, tomatoes, bean sprouts, chili, and herbs together. Let the flavors meld while you get the beef ready.
  • In a bowl, combine beef slices with sesame oil, sea salt, and pepper. Mix well to coat the beef. Skewer the beef onto the soaked skewers.
  • Heat up a chargrill pan over medium-high heat. Grill the beef for about 2-3 minutes on each side until nicely charred and fully cooked.
  • To make the dressing, simply combine all ingredients in a bowl and stir until the sugar dissolves. Drizzle the dressing over the salad and mix thoroughly to coat everything evenly.
  • Plate the beef skewers alongside the salad, and generously sprinkle with sesame seeds.
