Ingredients:
  • 86.63 gm soy sauce
  • 40.00 ml rice wine vinegar
  • 32.00 gm brown sugar
  • 800g beef rump steak, trimmed, thinly sliced
  • Rice bran oil spray
  • 1 large red onion, cut into 3cm cubes
  • 12.00 gm sesame seeds
  • 270g packet dried udon noodles
  • 9.20 gm rice bran oil
  • 1 large red capsicum, chopped
  • 250.00 ml broccoli florets
  • 425g can baby corn spears, drained, halved lengthways
  • 150g snow peas, trimmed, halved
  • 1 tsp sesame oil
  • 65.63 gm lemon juice
Instructions:
  • In a spacious bowl, mix together soy sauce, vinegar, minced garlic, and sugar. Add the beef and coat it well. Cover and chill in the refrigerator for 3 hours, if possible.
  • Prepare the chargrill pan with a light mist of rice bran oil and heat over medium-high flame. Skewer the beef and onion pieces interchangeably, then sprinkle with sesame seeds. Grill the skewers for 8 to 10 minutes, flipping occasionally, until beautifully browned and fully cooked.
  • While noodles cook according to packet instructions, sauté capsicum, broccoli, and corn in oil in a large deep frying pan over medium-high heat for 3 minutes. Add snow peas and cook for 2 more minutes. Stir in sesame oil, lemon juice, and drained noodles. Cook, stirring, for 1 minute until everything is well combined.
  • Present the skewers over a bed of vibrant stir-fry.
