Ingredients:
  • 265g white rice
  • 70g almond
  • 500g lean beef stir-fry strips
  • 10.00 gm Middle Eastern spice mix
  • Olive oil spray
  • 82.50 ml chopped fresh coriander
  • Prepared tzatziki, to serve
  • Dressed salad leaves, to serve
Instructions:
  • Prepare rice according to package instructions using the absorption method. Then, in a small non-stick pan over medium heat, toast almonds for 5-6 minutes, stirring frequently, until they turn golden. Remove from heat and set aside.
  • Coat beef strips in spice mix and skewer onto 12 soaked wooden skewers or metal skewers.
  • Preheat your barbecue or chargrill to medium-high heat. Grill the skewers for 1-2 minutes on each side, or until they are just cooked. Transfer to a plate and let them rest for 5 minutes before serving.
  • Mix the almonds and coriander into the fluffy rice. Enjoy the flavorful rice with skewers, tzatziki, and crispy salad leaves.
