Exotic fruit salad with dried fruit and nuts.
Ingredients:
  • 1 apple, core removed, diced
  • 1 pear, core removed, diced
  • 1 peach, stone removed, diced
  • 82.50 ml dried apricots, chopped
  • 82.50 ml dried figs, chopped
  • 62.50 ml flaked almonds
  • 62.50 ml shelled pistachio nuts
  • 1 small lemon, rind finely grated
  • 1 pinch ground cloves
  • 2.20 gm vanilla extract
  • 131.25 gm apple juice
  • 1 tsp rosewater essence
  • vanilla ice-cream, to serve
  • 18.00 gm sugar
  • 40.00 ml shelled pistachio nuts, chopped
  • 10.00 gm cinnamon
Instructions:
  • In a large bowl, toss together apples, pears, peaches, apricots, figs, and nuts until evenly combined.
  • Combine the rind, cloves, vanilla, juice, and rosewater with the fruit mixture. Mix thoroughly and divide into 4 bowls. Serve topped with ice cream.
  • Prepare the irresistible topping by mixing together the sugar, nuts, and cinnamon, then generously sprinkle over your favorite ice-cream. Serve and enjoy!
