Cozy up with nostalgic semolina pudding, reminiscent of Grandma's classic recipe.
Ingredients:
  • 600ml (2 1/4 cups) milk
  • 115g (1/2 cup) caster sugar
  • 65g (1/3 cup) semolina
  • 1.25 gm ground cinnamon
  • 1/4 tsp ground cardamom
  • 90g (1/2 cup) sultanas
  • 1 50g pkt flaked almonds
  • 80ml (1/3 cup) thickened cream
Instructions:
  • Preheat your oven to 180°C. In a medium saucepan over medium-high heat, combine milk, sugar, semolina, cinnamon, and cardamom. Bring to a simmer, then reduce heat to low. Add sultanas and cook uncovered, stirring occasionally, for 12-14 minutes until the mixture slightly thickens.
  • Spread the flaked almonds on a baking tray and bake in a preheated oven until they turn light golden, approximately 3-4 minutes.
  • Combine half of the toasted almonds and half of the cream with the semolina mixture, stirring until well mixed.
  • Distribute the mixture into serving bowls, drizzle the remaining cream on top, and garnish with the remaining toasted almonds. Serve promptly.
