Ingredients:
  • 4 leeks, trimmed, thinly sliced
  • 140g (about 10 thin slices) pancetta, cut into strips
  • 20.00 ml chopped fresh oregano
  • 8 (about 120g each) veal leg steaks
  • 1kg ripe tomatoes, chopped
  • 44.40 gm tomato paste
  • 2.50 gm caster sugar
Instructions:
  • In a large frying pan over medium heat, heat 1 tablespoon of oil. Add leeks, pancetta, and garlic. Cook uncovered, stirring occasionally, for 10-12 minutes until leeks are soft. Stir in oregano, season with salt and pepper. Transfer to a large bowl, cover, and set aside to cool slightly for 20 minutes.
  • Flatten each veal steak to about 8mm thickness by pounding between plastic wrap using a meat mallet or rolling pin. Repeat for all steaks.
  • Lay out the 4 steaks on a clean surface, overlapping slightly to create a 20 x 26cm rectangle. Cover with plastic wrap and gently flatten the overlapped edges using a meat mallet or rolling pin to seal. Uncover and spread half of the cooled leek mixture over the veal, leaving a 2cm border. Roll up the veal from one long side to completely enclose the mixture. Secure by tying with white unwaxed string at 5cm intervals. Repeat the rolling process with the remaining veal and leek mixture.
  • In a frying pan over medium-high heat, heat the remaining oil. Add the veal rolls and cook uncovered, turning occasionally, until browned all over for about 4-5 minutes. Lower the heat to medium, and stir in the tomatoes. Cook partially covered, turning the veal rolls occasionally, until they are just cooked for about 8-10 minutes. Transfer the veal rolls to a plate, cover loosely with foil, and set aside while you finish the sauce.
  • Turn up the heat to medium-high and introduce the tomato paste to the pan. Allow it to cook without a cover, stirring frequently, for about 5 minutes until the sauce reduces and thickens slightly. Next, incorporate the sugar and season with salt and pepper. Remove the string from the rolls and cut them into thick slices. Present the sliced veal rolls with the delectable tomato sauce on top.
