Elevate your Christmas dinner with a flavorful rolled turkey breast filled with savory pancetta, sweet figs, and aromatic leeks.
Ingredients:
  • 12 dried dessert figs
  • 40.00 ml dry Marsala (Italian fortified wine)
  • 30g unsalted butter
  • 18.20 gm olive oil
  • 2 leeks (white part only), rinsed well, patted dry
  • 40.00 ml chopped lemon thyme leaves
  • 20 thin slices of rindless pancetta from a long, flat piece
  • 1.2-1.5kg skinless boned turkey breast (see note)
  • 80ml maple syrup
  • Accompaniments (see related recipes) and mustard fruits, to serve (see note)
Instructions:
  • Allow figs to luxuriate in marsala for 30 minutes.
  • In a large frypan over medium heat, melt butter with oil. Add leeks, sprinkle with thyme, and season with salt and pepper. Cook for about 10 minutes until leeks are soft and slightly caramelized. Once cooked, halve lengthways and let cool.
  • Lay a large sheet of baking paper on a work surface. Arrange the pancetta slices slightly overlapping to create a layer large enough to wrap around the turkey.
  • Butterfly the turkey without cutting it all the way through, then lay it open. Place it in a large plastic bag and gently flatten the thickest parts with a rolling pin. Remove from the bag and lay pancetta on top, season with salt and pepper. Next, arrange two leek halves end to end down the center, followed by the figs and remaining leek. Roll the turkey around the filling using a sheet of paper to help, ensuring it's fully covered by pancetta. Discard the paper, wrap the roll tightly in foil, and chill for 2 hours.
  • Preheat the oven to 180°C. Roast the turkey in a roasting pan for 1 hour. Uncover, brush with syrup, and roast for an additional 25 minutes or until the juices run clear when pierced with a skewer. Let it rest loosely covered with foil for 15 minutes, then slice thickly and serve with accompaniments topped with mustard fruits.
