Festive Christmas turkey stuffed with quinoa, berries, and almonds for a juicy and rich holiday feast.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 187.50 ml white quinoa
  • 40.00 ml fresh thyme leaves
  • 150g bag dried mixed berries (see Notes)
  • 82.50 ml raw almonds, sliced, toasted
  • 2kg double turkey breast
  • 20g butter
  • Asparagus, to serve
  • Baby roma tomato, to serve
  • Parsley salad, to serve
  • Gravy, to serve
Instructions:
  • In a saucepan, heat oil over medium heat. Sauté onion for 4 minutes until softened. Add garlic and cook for 1 minute until fragrant. Toast quinoa for 5 minutes while stirring. Pour in 1 1/2 cups water, increase heat and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes until water is absorbed and quinoa is tender. Transfer to a bowl to cool, then mix in thyme, dried berries, and almonds. Season with salt and pepper. Enjoy!
  • Place the turkey breast, skin-side down, on a chopping board with the pointed ends facing you. Make a diagonal slit into one breast starting from where the breasts join, then slice horizontally without cutting all the way through. Repeat with the other breast. Spread the stuffing over the turkey and roll it up to enclose the stuffing, tying with kitchen string at 3cm intervals.
  • Preheat your oven to 180C/160C fan-forced. Melt the butter in a microwave-safe dish for about 1 minute on medium (50%) power. Place the turkey, skin-side up, on a greased wire rack in a large roasting pan. Add 3 cups of water to the pan. Brush the turkey with the melted butter and season with salt and pepper. Roast until the turkey is browned and cooked through, for about 2 hours.
  • Place the turkey on a plate and cover it with foil. Allow it to rest for 10 minutes. Remove and discard the string before slicing. Serve the turkey with a side of salad and gravy.
