Christmas turkey rolled and stuffed with zesty lemon, crispy bacon, and savory breadcrumbs for a festive feast.
Ingredients:
  • 60g butter
  • 2 leeks, trimmed, white part only, finely chopped
  • 3 middle bacon rashers, trimmed, finely chopped
  • 5 garlic cloves, crushed
  • 500.00 ml fresh breadcrumbs
  • 82.50 ml finely chopped fresh flat-leaf parsley leaves
  • 30.00 ml ground lemon myrtle
  • 2 x 1.5kg fresh single turkey breasts with skin
  • 56.88 gm extra virgin olive oil
  • 800g green beans, trimmed
  • 4 bunches asparagus, trimmed
  • Gravy, to serve
  • Lemon zest, to serve
  • Flaked toasted almonds, to serve
Instructions:
  • In a large frying pan over medium heat, melt butter until sizzling. Toss in leek, bacon, and most of the garlic. Sauté for 8 minutes until tender. Transfer the savory mix to a spacious bowl and let it cool. Mix in breadcrumbs, parsley, and lemon myrtle, and don't forget to season well. Combine everything thoroughly for an aromatic blend.
  • Preheat the oven to 180C/160C fan-forced. Slice the turkey breast lengthwise without cutting all the way through and lay it flat, skin-side down. Cover with plastic wrap and flatten to 1cm thickness using a meat mallet or rolling pin. Remove the wrap, spread half the stuffing evenly, then roll up the turkey to form a log. Tie with kitchen string at 4cm intervals. Place in a roasting pan. Repeat with the second turkey breast and stuffing. Brush both turkey rolls with 1 tablespoon oil and season generously.
  • Roast turkey for 1 hour 15 minutes, basting in juices, until perfectly cooked. Rest covered for 15 minutes before serving.
  • While eagerly waiting, bring a big saucepan of salted water to a boil. Cook the beans and asparagus for 3 minutes or until they turn a vibrant green and become tender. Drain them and then return them to the pan along with the rest of the oil and garlic. Mix everything together.
  • Slice the succulent turkey, then generously sprinkle it with aromatic lemon zest and crunchy almonds before serving alongside a colorful array of vegetables and rich gravy.
