Lemon myrtle dampers

Australian-inspired dampers infused with zesty lemon myrtle.
Ingredients:
  • 300.00 gm self-raising flour
  • 50g butter, chilled, chopped
  • 1/2 tsp dried lemon myrtle (see note)
  • 193.13 gm milk
  • Extra milk, for brushing
  • Extra plain flour, for dusting
  • Softened butter, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced for the perfect bake.
  • Prepare a baking tray with a light coating of grease. In a large bowl, sift together flour and salt. Add butter and use your fingertips to blend it into the dry ingredients until the mixture resembles fine crumbs. Mix in the lemon myrtle and season with pepper. Create a well in the center of the mixture and pour in the milk. Stir well until a soft and sticky dough forms.
  • Transfer the dough onto a lightly floured surface and gently knead it for 1 minute until it is just smooth. Then, form the dough into 6 balls.
  • Lay out the balls on the tray. Score the tops with shallow cuts. Brush lightly with extra milk and sprinkle with a bit of flour.
  • Bake for 15 minutes or until rolls have a hollow sound when tapped. Serve warm or at room temperature with butter.
