Cozy up with a velvety leek and potato soup, ready in just 1 hour.
Ingredients:
  • 3 tablespoons salted butter
  • 3 large leeks (white and pale green parts only), chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 3 medium Yukon Gold potatoes, peeled and cubed
  • 1 (32 ounce) carton no-salt-added vegetable broth
  • 2 cups water
  • 1 cup heavy cream, or to taste
  • 4 teaspoons salt, or to taste
Instructions:
  • In a pot over medium heat, melt butter until sizzling. Saute leeks until soft, then add celery and cook until fragrant. Introduce garlic and let it infuse its aroma. Mix in potatoes and vegetable broth, simmer until potatoes are fork-tender - around 25 mins.
  • Use an immersion blender or regular blender to smoothly combine ingredients in batches, then gently mix in heavy cream and salt.
