Elevate your side dish game with leeks and Gruyère cheese in this flavorful twist on a classic baked dish.
Ingredients:
  • 8 medium leeks with tops (3 lb)
  • 2 tablespoons butter or margarine
  • 2 tablespoons plus 2 teaspoons Gold Medal™ all-purpose flour
  • 1/8 teaspoon pepper
  • 1 1/3 cups milk
  • 1 cup shredded Gruyère cheese (4 oz)
  • 1/4 cup Progresso™ dry bread crumbs (any flavor)
  • 2 teaspoons butter or margarine, melted
Instructions:
  • Preheat oven to 325°F. Grease a shallow 2-quart casserole dish. Cut leeks into 1/2-inch pieces. In a 3-quart saucepan, bring 2 inches of water to a boil, then add leeks. Cover and cook over medium heat for about 5 minutes until they are crisp-tender; then drain.
  • In a 2-quart saucepan, gently melt 2 tablespoons of butter. Cook flour, salt, and pepper over low heat, stirring constantly, until it becomes smooth and bubbly; take off the heat. Slowly pour in the milk. Heat until boiling while stirring constantly. Boil and stir for 1 minute. Add cheese and stir until melted. Mix in leeks and pour the mixture into a casserole dish.
  • Combine bread crumbs and 2 teaspoons of butter in a small bowl until mixture becomes crumbly, then evenly sprinkle over the casserole.
  • Bake until golden brown, for about 25 minutes without covering.
