Transform your leftover Christmas pudding into a delightful post-holiday treat. Have an extra pudding on hand for this brilliant recipe.
Ingredients:
  • 200 g Christmas pudding leftover
  • 6 tablespoons cranberry sauce
  • red or mulled wine
  • 2 teaspoons sugar to taste, optional
  • 500 ml good-quality vanilla ice cream
  • 1 large handful of flaked almonds
  • 100 g good-quality dark chocolate (70% cocoa solids)
Instructions:
  • Heat your pan over medium heat and crumble in the Christmas pudding. Press down lightly with a wooden spoon to crisp up. Cook for 4 to 5 minutes, stirring occasionally. In another small pan over low heat, combine cranberry sauce and a splash of red or mulled wine. Heat for a few minutes. Sweeten with sugar if needed, or use spiced sugar for extra flavor. Toast almonds until light brown under a hot grill. Divide half of the warm, crispy pudding among four bowls. Top with vanilla ice cream, warm cranberry sauce, and toasted almonds. Repeat layering with remaining pudding, ice cream, sauce, and almonds. Finish with grated dark chocolate and enjoy before the ice cream melts.
