Leftover Moroccan Meat Pie

Create a delicious Moroccan-inspired pie using leftover meat and veggies.
Ingredients:
  • 1 sweet potato, diced
  • 1.25 cups water
  • 0.25 yellow onion, chopped
  • 1 (.87 ounce) package dry brown gravy mix
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon curry powder
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground turmeric
  • 1 cup shredded leftover pot roast
  • 0.5 cup peas
  • 0.5 cup frozen corn
  • 1 frozen deep-dish pie crust
  • 0.5 cup crumbled feta cheese
Instructions:
  • Place sweet potato in a saucepan and cover completely with water. Bring to a boil, then simmer over medium-low heat until just tender, approximately 15 minutes. Drain the sweet potato.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • In a saucepan, bring water, onion, and garlic to a boil. Lower the heat and simmer until the onion softens, approximately 5 minutes.
  • Whisk together gravy mix, cumin, cinnamon, curry powder, ginger, black pepper, turmeric, and salt with water. Stir in the leftover pot roast, sweet potatoes, peas, and corn. Cook until heated through for about 5 minutes. Transfer the filling to the frozen pie crust and sprinkle feta cheese on top.
  • Bake in a hot oven until the crust turns golden brown around the edges, approximately 25 minutes.
