Transform leftover pasta into a delicious and satisfying frittata for the whole family.
Ingredients:
  • 4 green onions, sliced
  • 1 medium zucchini, halved lengthways, thinly sliced
  • 500.00 ml chopped cooked spaghetti pasta
  • 137.50 gm chunky tomato pasta sauce
  • 5 eggs
  • 128.75 gm milk
  • Mixed salad, to serve
Instructions:
  • In a non-stick frying pan, heat oil over medium heat. Cook onion, garlic, and zucchini for 5 minutes until zucchini is tender. Stir in spaghetti and pasta sauce, and cook for 1 minute until heated through. Preheat the grill on medium.
  • In a jug, combine eggs and milk, season with salt and pepper, then pour into the pan. Cook for 5 minutes until frittata is nearly set. Transfer to the grill and cook for 2 to 3 minutes until the frittata is fully set with a golden top. Serve alongside a fresh salad.
