Elevate your week with our vibrant lemon herb chicken pasta.
Ingredients:
  • 375g bowtie (farfalle) pasta
  • 100g butter, chopped
  • 2 zucchini, coarsely grated
  • 2 yellow zucchini, coarsely grated
  • 500.00 ml shredded cooked chicken
  • 2 green onions, thinly sliced
  • 1 large lemon, rind finely grated, juiced
  • 62.50 ml chopped flat-leaf parsley leaves
  • grated parmesan cheese, optional, to serve
  • Salt, to season
Instructions:
  • Boil pasta in salted water as per packet instructions until tender, then drain and set it aside.
  • Heat 30g of butter in a large frying pan over medium heat. Sauté zucchini and garlic for 5 minutes until zucchini is soft. Add chicken and cook for 4 minutes until heated through.
  • Combine pasta, the rest of the butter, green onions, lemon zest, lemon juice, and parsley with the chicken mixture. Stir over low heat until warmed. If desired, top with Parmesan cheese. Season with salt and pepper. Serve warm.
