Try this irresistible lemon almond cookie brittle with toasted almonds for a quick and easy treat.
Ingredients:
  • 1 cup sliced almonds
  • 0.75 cup butter
  • 0.75 cup white sugar
  • 1 teaspoon lemon extract
  • 0.125 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons finely grated lemon zest
  • 1 tablespoon sifted confectioners' sugar, or as needed
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Place almonds on a baking sheet and line a 9x13-inch baking dish with parchment paper.
  • Toast the almonds in the preheated oven until fragrant, about 7 to 8 minutes. Then, chop the almonds.
  • In a large mixing bowl, use an electric mixer to beat butter on medium-high speed for 30 seconds. Add white sugar, vanilla extract, lemon extract, and salt. Beat until well combined, scraping the sides of the bowl occasionally. Stir in flour, lemon zest, and 1/2 cup almonds until dough is formed.
  • Evenly spread the dough in the baking dish. Sprinkle the remaining almonds on top and gently press them down.
  • Bake until the top is golden, approximately 20 minutes in the preheated oven. Let the brittle cool in the dish on a wire rack. Sprinkle confectioners' sugar over the brittle, then break it into chunks.
