German Almond Meringue Cookies spiced with cinnamon and lemon - a festive Christmas tradition!
Ingredients:
  • 11 ounces ground almonds
  • 3 egg whites
  • 1 cup confectioners' sugar
  • 1 teaspoon grated lemon zest
  • 0.75 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare cookie sheets by greasing and lightly flouring them.
  • In a large bowl, whip egg whites until soft peaks form. Slowly add sugar while continuing to whip until stiff peaks form, approximately 5 minutes. Reserve 1/2 cup of the egg whites. Gently fold lemon zest, cinnamon, and almonds into the remaining meringue until well combined.
  • Spoon mounds onto the baking sheets and add a smaller dollop of reserved meringue on top of each cookie.
  • Bake in the preheated oven for 15 minutes until golden brown, then transfer the cookies to wire racks to cool.
