Elevate winter desserts with the bright and tangy flavors of fresh lemons.
Ingredients:
  • 107.50 gm caster sugar
  • 70g butter, softened
  • 2 eggs, separated
  • 42.00 gm lemon juice
  • 20.00 gm self-raising flour
  • 20.00 gm almond meal
  • 321.88 gm milk
  • 40.00 ml flaked almonds
  • 1 lemon, thinly sliced
  • 32.00 gm brown sugar
  • Icing sugar mixture, to serve
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 170C/150C fan-forced. In an electric mixer, cream together caster sugar and 50g of butter until fluffy. Mix in the egg yolks one at a time until well combined. Carefully fold in lemon rind, lemon juice, flour, almond meal, and milk with a large metal spoon, being careful not to over mix.
  • Beat egg whites in a clean dry bowl until soft peaks form. Gently fold through lemon mixture (don't worry if it looks slightly curdled). Spoon into a greased 5 cup-capacity ceramic pudding dish, sprinkle with flaked almonds. Bake at 350°F for 40-45 minutes until golden and just set, covering with foil if needed to prevent over-browning.
  • 1. Spread brown sugar in a shallow dish. Coat lemon slices in sugar. Melt the remaining butter in a frying pan over medium-high heat. Caramelize lemon slices in sugar for 1 minute on each side. Place lemon slices on top of the pudding. Sprinkle with icing sugar and serve promptly with a scoop of ice cream.
