Homemade citrus mayo perfect for chicken, fish, and salads. Lasts 2 weeks in the fridge.
Ingredients:
  • 2 large egg yolks
  • 1 lemon, rind finely grated, juiced
  • 2.95 gm Dijon mustard
  • 250mls (1 cup) peanut oil
  • 40.00 ml chopped fresh basil
  • Salt & ground black pepper, to taste
Instructions:
  • In a food processor, combine egg yolks, lemon juice, and Dijon mustard until creamy. While the processor is running, slowly drizzle in peanut oil until mayonnaise thickens. Gradually pour in the rest of the peanut oil in a steady stream. Transfer mayo to a bowl, mix in lemon rind and basil. Season with salt and pepper. Store in an airtight container in the fridge.
