Basil mayo enhances broiled shrimp in zesty citrus sauce.
Ingredients:
  • 1 tablespoon grated lemon peel
  • 3 tablespoons lemon juice
  • 3/4 teaspoon crushed red pepper
  • 2 cloves garlic, finely chopped
  • 3 tablespoons olive or vegetable oil
  • 1 lb uncooked peeled deveined large shrimp (22 to 25 shrimp), thawed if frozen and tails peeled
  • 1/2 cup loosely packed fresh basil leaves
  • 1/2 cup mayonnaise or salad dressing
Instructions:
  • Preheat broiler. Combine lemon peel, lemon juice, red pepper, salt, garlic, and 1 tablespoon of oil in a medium glass or plastic bowl. Add shrimp and coat evenly. Spread shrimp in an ungreased 15x10x1-inch pan.
  • Cook the shrimp under the broiler, positioned 2 to 3 inches from the heat source, for 3 to 5 minutes, or until the shrimp turn pink and become firm.
  • Place basil and the remaining 2 tablespoons of oil in a food processor. Pulse until chopped. Add mayonnaise and blend until smooth. Serve shrimp with the mayonnaise.
