Spicy Shrimp Fettuccine with Garlic and Tomatoes

Garlic shrimp cooked with tomatoes, zesty lemon, and spicy peppers, served on a bed of fettuccine for a delicious and easy meal.
Ingredients:
  • 4 ounces dry fettuccine pasta
  • 4 tablespoons extra-virgin olive oil
  • 1 onion, finely chopped
  • 1 rib celery, chopped
  • 3 cloves garlic, finely chopped
  • 2 chile peppers, seeded and diced
  • 0.75 pound large uncooked shrimp
  • 4 large tomatoes, chopped into small pieces
  • 1 lemon, juiced
  • 0.5 teaspoon white sugar
  • sea salt and freshly ground pepper
Instructions:
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook the fettuccine until al dente, about 8 minutes.
  • In a large skillet over medium heat, sauté onion, celery, and garlic in oil until soft, about 3-5 minutes. Add chile peppers and cook for an additional 5 minutes.
  • Add shrimp to the pan and sauté until they turn opaque, approximately 3 minutes. Mix in tomatoes and parsley, cook for an additional 5 minutes. Add lemon juice and sugar, and let it cook for 5 more minutes. Finally, season with salt and pepper to taste.
  • After draining the fettuccine, mix it with the shrimp mixture.
