Delicious lemon and coconut winter treat with a gooey center.
Ingredients:
  • 250ml milk
  • 75g self-raising flour
  • 100g butter, softened
  • 165g caster sugar
  • 2 tsp finely grated lime rind
  • 4 Free Range Eggs, separated
  • 250ml can coconut milk
  • 125ml lemon juice
  • 60ml lime juice
  • 24.00 gm icing sugar mixture
  • 6 scoops vanilla ice-cream (optional)
  • Lemon zest, to serve
Instructions:
  • Preheat the oven to 180°C. Using an electric mixer, whip together butter, sugar, lemon rind, and lime rind until pale and creamy. Mix in egg yolks until well combined. Stir in the flour, then add milk, coconut milk, lemon juice, and lime juice, and mix until fully incorporated.
  • 1. In a clean, dry bowl, whisk the egg whites using an electric mixer until soft peaks form. 2. Gently fold the whipped egg whites into the butter mixture using a large metal spoon. 3. Divide the mixture evenly among six 1 1/2 cup (375ml) ovenproof dishes and place them on a baking tray.
  • Bake for 20-25 minutes until tops are lightly golden and almost set. Let it rest for 5 minutes, then dust with icing sugar. Serve with a scoop of ice cream, if desired, and garnish with lemon zest.
