Classic Aussie biscuits made with butter, oats, golden syrup, and coconut - a delicious treat!
Ingredients:
  • 250.00 ml plain flour
  • 100.00 gm rolled oats
  • 85.00 gm desiccated coconut
  • 1 tsp finely grated lemon rind
  • 125g butter
  • 53.60 gm golden syrup
  • 20.00 gm boiling water
Instructions:
  • 1. Preheat your oven to 180°C/160°C fan-forced and line 2 baking trays with baking paper. 2. In a bowl, sift flour, then add oats, coconut, sugar, and lemon rind. Stir well to combine and make a well in the center.
  • In a microwave-safe bowl, combine the butter and golden syrup. Microwave on high for 30 seconds until the butter has melted. Stir the mixture well. In a separate bowl, mix the bicarbonate of soda with boiling water. Add this to the butter mixture and stir everything together. Finally, combine this mixture with the flour and stir until well combined.
  • Shape level tablespoons of the mixture into balls and arrange them on prepared trays, 3cm apart. Gently flatten each ball. Bake for 13 to 15 minutes, rotating trays halfway through, until golden. Let cool on trays for 5 minutes, then transfer to a wire rack. Serve and enjoy.
