ANZAC biscuits

Iconic Aussie Anzac biscuits - a golden, crunchy delight forever celebrated in cookbooks.
Ingredients:
  • 165g (3/4 cup firmly packed) brown sugar
  • 150g (1 cup) plain flour
  • 90g (1 cup) rolled oats
  • 75g (1 cup) shredded coconut
  • 1 orange, zested
  • 45g (1/3 cup) macadamias, finely chopped
  • 150g butter, chopped
  • 90g (1/4 cup) honey
  • 1.25 gm bicarbonate of soda
Instructions:
  • Heat the oven to 180°C. Combine sugar, flour, oats, coconut, orange zest, and nuts in a bowl, then use your fingertips to blend and break up any sugar lumps until well combined.
  • In a medium saucepan, combine butter and honey over low–medium heat. Stir continuously for 3 minutes until butter melts. Increase heat to medium and simmer for 2 more minutes until thickened and deep golden. Remove from heat, quickly mix in bicarbonate of soda, followed by 2 tablespoons water, whisking carefully as the mixture will froth.
  • Drizzle warm honey mixture over dry ingredients, mix until fully incorporated, then allow to cool for 10 minutes.
  • - Prepare 2 large oven trays with baking paper. - Use a 7cm egg ring or pastry cutter on the tray. - Spoon in 2 level tablespoons of mixture into the ring. - Flatten the mixture to fill the ring evenly. - Remove the ring and continue making 9 biscuits on each tray, spaced 5cm apart.
  • Bake until golden for about 12 minutes. Let cool on tray. Store biscuits in an airtight container for up to 2 weeks.
